I really enjoy doing accordion cards due to the complexity in making sure all lose ends of paper, ribbons are nicely hidden.

Besides that, it give plenty of space for messages. If you have a theme, an accordion card is able to showcase the whole theme as there are many pages involved.

To add more challenge to it, you may also include photos and basically make it like a little scrapbook.
